Banana Cream of Wheat Bread Recipe

Origin: Liberia      Period: Traditional

Ingredients

280g cream of wheat (farina or ground wheat)
1/2 tsp salt
1 tbsp sugar
1 tsp ground nutmeg
1 tsp ground cinnamon
300g ripe bananas, mashed
2 eggs
360ml water
240ml oil

Banana Cream of Wheat Bread Preparation:


Method:

Combine the cream of wheat, salt, nutmeg and cinnamon in a bowl then gradually add the bananas, eggs, water and oil. Blend thoroughly to combine then turn the batter into a well-greased 1kg loaf tin. Place in an oven pre-heated to 170°C and bake for about 45 minutes, or until the top is golden and a skewer inserted into the centre of the cake emerges cleanly.

Allow to cool in the tin for 5 minutes then turn onto a wire rack and allow to cool completely before serving.
