Ingredients
120g butter
Banana Bread I Preparation:Method:Begin by creaming the butter and sugar together in a mixing bowl until light and fluffy. Lightly beat the egg and add a little at a time to the creamed butter mix, ensuring it's well incorporated after each addition. Sift the flour, baking powder, salt and nutmeg together into a separate bowl. In another bowl mash the banana and vanilla together (it's much less work if you use slightly over-ripe bananas as these are easier to mash and you need a fine paste). Alternately add mashed banana and the flour mix to the creamed butter mix. Beat after each addition to ensure the ingredients are thoroughly mixed. Finally tos the raisins with 1 tsp of flour and the chopped nuts. Add this to the batter and blend in. Pour the batter into a greased loaf tin and bake in an oven pre-heated to 180°C for an hour, or until a toothpick inserted into the centre of the bread comes out clean. |
