Baltic German Beet Relish Recipe

Origin: German      Period: Traditional

Ingredients:

800g cabbage
750g beetroot, cooked
400g plus 2 tbsp sugar
1 tbsp salt
1 tsp black pepper
1/2 tsp chilli powder
160ml prepared horseradish, grated
white wine vinegar

Baltic German Beet Relish Preparation:


Method:

Chop cabbage and beetroot then add the seasonings and horseradish and mix thoroughly. Add enough cold vinegar to cover then put into a 1l jar. Cover with more vinegar, as necessary, and refrigerate. This will keep for up to a year in the refrigerator.
