Baked Whiskey-glazed Ham RecipeOrigin: America Period: Traditional |
Ingredients:
1 semi-boneless ham (fully cooked variety, about 2.5kg)
Baked Whiskey-glazed Ham Preparation:Method:Place the ham, fat side uppermost, on a rack in a shallow roasting pan. Place in an oven pre-heated to 160°C and roast for 2 hours, or until the meat can be easily pierced with a fork. Take out of the oven and cut away the rind with a large, sharp, knife. Score through the remaining fat until you reach the meat beneath, forming a 1cm diamond pattern. Return to the oven and increase the heat to 220°C. Baste the ham on all sides with 120ml of the whiskey. Meanwhile, combine the sugar, mustard powder and the remaining whikey in a bowl. Remove the meat from the oven and stud each diamond intersection in the fat with a clove. Brush the whiskey mixture thickly over the ham thn return to the oven. Baste lightly with the pan drippings then roast, undisturbed, for 20 minutes, or until the sugar has melted and caramelized. Remove to a warmed plate then allow to cool slightly before carving. Garnish the slices with parsley beofre taking to the table. |
