Baked Savoury Eggs Recipe

Origin: Britain      Period: Traditional

Ingredients:

6 eggs
3 field (or Portabello) mushrooms, diced
1/2 onion, finely chopped
4 rashers of bacon, diced
butter to fry
salt and black pepper, to taste
paprika to garnish

Baked Savoury Eggs Preparation:


Method:

Melt a little butter in a pan and when hot add the bacon. When the rashers begin to release their fat add the mushrooms and onion and fry until the onion is softened (about 6 to 8 minutes). Take off the heat, season to taste and divide between 6 buttered ramekins.

Crack the eggs, one into each ramekin, then place in a baking pan. Add a little water then place in an oven pre-heated to 180°C. Bake for about 10 minutes, or until the egg white is just set and the yolk is still soft.

Season to taste, garnish with a dusting of paprika and serve with hot toast.
