Salmon is another of the classic Scottish fish and Scotland is rightly famous for its salmon fishing. This traditional dish treats the fish quite lightly, allowing the best of its flavours to emerge. Ingredients:
4 salmon fillets
Baked Salmon with Tarragon Preparation:Method:Add the butter to a pan and melt. Use this to gently fry the chopped onion until just softened (but not coloured), about 5 minutes. Add the bacon and tarragon and cook for a further 2 minutes before stirring-in the lemon juice. Place a large sheet of well-buttered foil in a baking dish. Arrange the salmon in the base, spoon the bacon and onion mixture over the top then close the foil over the fish to form a parcel. Set in an oven pre-heated to 180°C and bake for about 20 minutes, or until the salmon is just done. Serve with fresh vegetables and a squeeze of lemon juice. |
