Baked Potatoes with Cheese Recipe

Origin: Bulgaria      Period: Traditional

Ingredients:

900g potatoes, peeled and sliced
360g Feta cheese, crumbled
120g butter, softened
freshly-ground black pepper, to taste
3 medium eggs
300ml plain yoghurt

Baked Potatoes with Cheese Preparation:


Method:

Butter a baking dish and arrange a third of the potatoes in the base. Meanwhile, cream together the butter and cheese and spread half this mixture over the potatoes. Sprinkle with pepper then add a further 1/3 of the potatoes on top. Spread with the remaining cheese mix and season with black pepper then top with the remaining potatoes.

Transfer to an oven pre-heated to 180°C and bake for 25 minutes. Now beat together the eggs and yoghurt until smooth. Pour this over the top layer of potatoes in the baking dish then return to the oven and bake for a further 30 minutes. When ready the top should be set and golden brown in colour.
