Ingredients:
1 fully cooked, smoked, ham (about 6kg)
Baked Ham with Apricot Bourbon Glaze Preparation:Method:Place the ham, fat side uppermost, in a shallow roasting tin lined with foil. Transfer to an oven pre-heated to 160°C and roast, uncovered, for about 3 1/4 hours (35 minutes per kg) or until a meat thermometer inserted into the thickest part of the ham reads 55°C About 45 minutes before the meat is due to be ready remove from the oven then take off any rind with a sharp knife. Meanwhile, in a small bowl, combine the apricot preserves and the Bourbon. Set aside 2 tbso of this glaze and brush the remainder over the ham before returning to the oven. Continue roasting until done, brushing 3 or 4 times with the glaze. When the surface of the meat is golden brown remove from the oven and transfer to a serving palte. Cover loosely then set aside to rest for 15 minutes before serving. |
