Baked Apples with Cream Cheese and Honey Recipe

Origin: Libya      Period: Traditional

Ingredients:

6 dessert apples, peeled and cored
200g sugar
500ml water
a few drops of red food colouring
500ml cream cheese
6 red cherries, pitted
6 tbsp honey

Baked Apples with Cream Cheese and Honey Preparation:


Method:

Add the water and sugar to a saucepan and heat gently until the sugar dissolves. Take off the heat then stir-in the red food colouring. Add the apples to a baking dish then pour the syrup solution over the top. Transfer to an oven pre-heated to 180°C and bake for about 40 minutes, turning every 10 minutes, until the apples are cooked through but not mushy.

Remove from the oven and set aside to cool for 10 minutes then carefully transfer the apples to individual glass cups (reserve the syrup) and set aside to cool.

Once the apples are cold fill the cores with the cream cheese and sit a cherry in the centre of the cream cheese filling. Pour a tablespoon of honey and a little of the reserved syrup over each apple then serve.
