Bacon and Rice Creole Recipe

Origin: Louisiana      Period: Traditional

Ingredients

450g bacon
1 green bell pepper, diced
3 small onions, chopped
2½ teaspoons salt
1/8 tsp pepper
450g canned tomatoes
1 cup raw rice (eg basmati)
oil to fry

Bacon and Rice Creole Preparation:


Method:

Simmer the vegetables and spices in a saucepan with a little oil and a little water for 10 minutes. Meanwhile fry the bacon in another pan until crisp. When done remove from the pan and set aside. Add the rice to the bacon pan and stir to coat. Allow the rice to brown slightly then add the vegetables and crumble-in the bacon. Add the tomatoes, bring to a boil then simmer for 30 minutes (add more tomatoes or water if the mixture becomes too dry). Serve as soon as it's done.
