Babotie
(Beef Pie) Recipe

Origin: South Africa      Period: traditional

Ingredients:

60g butter
150g onions, thinly sliced
1 apple, peeled and diced
900g cooked beef, chopped
2 slices of bread, crusts removed, soaked in milk
2 tbsp curry powder
90g raisins
2 tbsp slivered almonds
2 tbsp lemon juice
1 egg
1/2 tsp turmeric
6 bay leaves
1 egg
120ml whole milk

Babotie
(Beef Pie) Preparation:


Method:

Melt the butter in a pan and use to fry the onions until soft (about 5 minutes) then add the apple and cook for 1 minute more before stirring in the beef.

Squeeze the excess milk from the bread then tear with your hands and add to the pot along with the curry powder, raisins, almonds, lemon juice, egg and turmeric. Mix thoroughly to combine then turn the mixture into a well-greased dish about 22 x 30cm in size. Lay the bay leaves standing vertically in the casserole and place in an oven pre-heated to 160°C. Bake for about 35 minutes then take out of the oven.

Whisk together the egg and milk then pour over the top of the babotie. Return to the oven and bake for 15 minutes more. Remove the bay leaves and serve hot.
