Babki s zavalkoj zavarnogo krema
(Babki with Custard Filling) Recipe

Origin: Russia      Period: Traditional

In effect these are Russian versions of custard pies. Truly delicious.

Ingredients:

For the Pastry:
400g butter
200g sugar
280g plain flour
2 eggs

For the Custard:
2 egg yolks
120ml cream
100g sugar

fresh breadcrumbs

(Babki with Custard Filling) Preparation:


Method:

Begin with the pastry. Add the butter to a bowl then beat to a foam. Now add in the sugar and eggs and beat thoroughly before blending in the flour.

Meanwhile, whisk the egg yolks, cream and sugar in the top of a bain-marie (double boiler) and cook until the custard thickens. Now butter tart (cupcake) tins and dust with breadcrumbs, Roll out the doug hand use to line the cups then fill with the prepared custard. Top with circles of dough, crimp to seal and pierce the tops to make steam holes. Transfer to an oven pre-heated to 170°C and bake for 20 minutes, or until the pastry is golden. Transfer to a wire rack and allow to cool before serving. If desired, you can dust with sugar.
