Azeri Chicken Skewers Recipe

Origin: Azerbaijan      Period: Traditional

Ingredients:

1.8kg chicken meat cut into 3cm cubes
360ml plain yoghurt
2 onions, finely chopped
4 garlic cloves, finely chopped
1/2 tsp hot paprika
3/4 tsp sweet (Hungarian) paprika
1/2 tsp saffron threads ground in 1 tbsp warm water
45g fresh mint, finely chopped
salt, to taste


Azeri Chicken Skewers Preparation:


Method:

Simply mix all the ingredients in a large bowl. Stir thoroughly to combine then cover, place in a refrigerator and allow to marinate over night.

The following day soak your wooden skewers for at least 1 hour in a large bowl of water and heat your barbecue. Thread the chicken pieces on the skewers and cook for about 8 minutes per side, or until completely cooked through. Take any left-over marinade and use to brush the chicken as it cooks.
