In Trinidad avocadoes grow on just about every doorstep, so it's hardly surprising that they are pressed into every culinary use imaginable. Here is a classic recipe for an avocado-based soup. Ingredients:
5 ripe green avocadoes Avocado Soup Preparation:Method:Combine the avocado, green seasoning, salt, white pepper and cream in a food processor and purée until smooth. Meanwhile, heat the chicken stock in a large saucepan and bring just to a boil. Pour the avocado mixture into the hot stock then bring to a simmer and cook gently for 2 minutes before adding the sherry. Return to a simmer and cook for 2 minutes more. Adjust the seasonings to taste and serve ladled into soup bowls. This soup can be served either hot or cold, garnished with lime-treated avocado slices. |
