Avocado with Smoked Fish Recipe

Origin: Ghana      Period: Traditional

Ingredients

225g smoked fish
4 hard boiled eggs, whites and yolks separated
60ml milk
60ml lime juice
1/4 tsp sugar
1/2 tsp salt
80ml cooking oil
2 tbsp olive oil
2 large, ripe, avocados
1 large red bell pepper, chopped
12 pimentos from a jar

Avocado with Smoked Fish Preparation:


Method:

Flake the fish, removing any skin and bones then flake completely with a fork.

Meanwhile mash the egg yolks in a bowl with the milk until the mixture becomes a smooth paste. Stir-in the sugar, salt 1 tbsp of the lime juice and stir to combine. Beat in the vegetable oil a teaspoon at a time so it emulsifies with the milk mixture. Add the olive oil in the same manner.

Finely chop the egg whites and stir into the sauce along with the flaked fish. Once the sauce is ready cut the avocados in half, remove the pits and fill the holes with the fish mixture. Arrange on plates and garnish with the bell pepper and pimentos. Sprinkle the remaining lime juice over the top and serve.
