Avocado and Ham Pizza Recipe

Origin: Italy      Period: Traditional

Ingredients:

1 bread dough pizza base
4 sun-dried tomatoes, chopped
30g black olives, chopped
1 batch special tomato sauce
4 small chicory (endive) leaves, shredded
4 small radicchio leaves, shredded
1 avocado, peeled, pitted and sliced
60g wafer-thin smoked ham
60g blue cheese (cut into small cubes)
olive oil for drizzling
salt and black pepper
chopped fresh chervil to garnish

Avocado and Ham Pizza Preparation:


Method:

Turn the dough onto a lightly-floured surface and knead with the sun-dried tomatoes and black olives until thoroughly combined. Roll or stretch the dough into a 25cm circle then place on a greased baking sheet. Fold the edges with your fingers to form a rim then cover with a clean tea towel or cloth and set aside in a warm place to rise for 15 minutes before spreading with tomato sauce.

Top the pizza with the shredded leaves and then the sliced avocado. Scrunch up the ham then add to the top of the pizza with the cheese. Drizzle a little olive oil over the top then season liberally. Transfer to an oven pre-heated to 200°C and bake for about 18 minutes, or until the edges of the pizza are crisp and have turned a golden brown.

When ready sprinkle with chervil and serve immediately.
