Avga Omeleta me Patates
(Omelette with Potatoes) Recipe

Origin: Greece      Period: Traditional

Ingredients:

6 eggs, well beaten
4 medium potatoes
1 1/2 tbsp butter
salt and freshly-ground black pepper
olive oil for frying

(Omelette with Potatoes) Preparation:


Method:

Add the oil to a frying pan then cut the potatoes into thin slices. When the oil is hot, add the potatoes and cook, turning occasionally, until nicely browned. Meanwhile, heat the butter in another frying pan then transfer the fried potatoes to this pan, add the beaten eggs and season with salt and black pepper.

Cook until the omelette is done and nicely browned on one side then place a large plate on top of the pan, turn the omelette onto this then slide back into the pan so you can cook on the other side. Continue cooking until done, divide into quarters and serve.
