Avga Gemista
(Devilled Eggs) Recipe

Origin: Greece      Period: Traditional

Ingredients:

4 hard-boiled eggs
2 tbsp mayonnaise
1/2 tsp prepared mustard
1/2 tsp anchovy paste
salt and freshly-ground black pepper, to taste
capers, to garnish

(Devilled Eggs) Preparation:


Method:

Halve the eggs lengthways then remove the yolks and set in a bowl. Mash the yolks with a fork then combine them with the mayonnaise, mustard and anchovy paste. Season well then fill the egg halves with the mixture. Season with black pepper, garnish with capers and serve.
