Ingredients
1 carrot, chopped
Austrian Tomato Soup Preparation:Method:Melt the butter in a pan and add the onion, carrot and celery. Fry or 1 minute then add the tomatoes and fry for 2 minutes more. Meanwhile blend the flour with 2 tbsp of the stock and whisk this into the remaining stock. Add the stock and flour mix to the tomatoes along with the seasonings, paprika, bay leaf, marjoram and the lemon juice and zest. Bring the mixture to a boil, reduce to a simmer and cook for about 30 minutes, or until the vegetables are tender. Take off the heat and allow to cool then purée in a blender or food processor before passing through a sieve. Return to a pan, re-heat, then add 50g cooked rice and serve ladled into warmed soup bowls. |
