Aussie Stuffed Drumsticks Recipe

Origin: Australia      Period: Traditional

Ingredients:

60g pine nuts
60g raisins
2 tbsp cranberry sauce
8 chicken drumsticks
60g Barbie Sauce
60g Peach Nectar

Aussie Stuffed Drumsticks Preparation:


Method:

Add the pine nuts, raisins and cranberry sauce to a food processor and chop coarsely. Now supreme the drumsticks [to do this split the leg length ways and cut all meat away from the bone. Leaving approximately 2 1/2cm of the thin part of the leg cut the bone ensuring not to shatter and remove all fragments of bone.]

Spoon the chopped mixture into the cavity in the meat. Close the meat up and secure with a toothpick then tie securely with butcher's twine so that you get the drumstick shape back.

Mix the barbie sauce and peach nectar together. Place the drumsticks on a barbecue and cook, basting with the barbie sauce mixture as you turn them. Cook for about 25 minutes, turning and basting all the while. Season liberally with black pepper and serve on a bed of rice.
