Auntie Babe's Cheesecake Recipe

Origin: America      Period: Modern

Ingredients:

For the Crust:
245g Graham Cracker (or Digestive Biscuit) Crumbs
1 1/2 tsp ground cinnamon
2 tbsp sugar
6 tbsp butter, melted and cooled

For the Filling:
200g sugar
3 eggs, well beaten
720g cream cheese, softened
1/2 tsp vanilla extract

For the Topping:
300ml sour cream
3 tbsp sugar
1/2 tsp vanilla extract

Auntie Babe's Cheesecake Preparation:


Method:

Combine the crust ingredients and stir to mix thoroughly before patting into the base and 5cm up the sides of a 22cm diameter springform cake tin. Set aside.

Beat the cream cheese in a bowl until soft then gradualy add the sugar until thoroughly combined. Add the eggs by thirds, beating thoroughly to combine after each addition then beat in the vanila extract before pouring into the prepared crust. Transfer to an oven pre-heated to 180°C and bake for 25 minutes.

In the meantime, beat the topping mixture until smooth. Pour over the cooked cheesecake then return to the oven (increase the temperature to 240°C and bake for 5 minutes. Remove form the oven and allow to cool to room temperature before chilling in the refrigerator for 24 hours. Remove the sides of the tin and serve.
