Athole Brose Recipe

Origin: Scottish      Period: Traditional

According to legend this dessert was created by the Duke of Atholl as a means of capturing Ian MacDonald, Lord of the Isles and leader of the 1475 Highland Rebellion.

Ingredients:

100g coarse or medium oatmeal
2 tbsp runny honey
125ml whisky
250ml whipping cream
fresh raspberries for garnish

Athole Brose Preparation:


Method:

Spread the oatmeal evenly over the bottom of a baking tray and toast in an oven pre-heated to 200°C. Cook in the centre of the the oven, shaking occasionally, for about 15 minutes or until the oats are a rich, even, golden brown.

Set some oats aside for a garnish then add the remainder to a bowl before mixing in the honey and whisky. Add the cream to a clean bowl and whip until stiff then fold into the oatmeal mixture. Spoon into dessert glasses, top with the reserved oats, a few raspberries (and, traditionally a finger of home-made shortbread).
