Asparagus Tips and Cheese Toasts Preparation:Method:Melt the butter in a pan, and when foaming add the cold, cooked, asparagus tips. Fry gently until heated through then butter the toasts and arrange the fried asparagus on top. Sprinkle the grated cheese over the top of the asparagus then garnish each toast with a sprinkle of cayenne pepper. Place under a hot grill (broiler) and cook for just long enough for the cheese to melt and brown (do not leave too long, or the asparagus will dry) — serve immediately. |
