Ingredients:
400g brown rice
Arroz Integral com Mantiega de Amendoim e Bananas Preparation:Method:Add the rice and tomato juice along with 500ml water to a large pan and bring to the boil on high heat. Cover, reduce to a simmer and cook until the rice is done (about 50 minutes). Meanwhile fry the onions and green peppers in half the groundnut oil until the onions are soft and translucent. Add the curry powder, salt and pepper and cook for 1 minute. Mix the peanut butter with 60ml water and add this and the tomatoes to the onions. Add the remaining oil to a large pan then peel the bananas and cut into 5cm lengths. Fry in the oil until golden on all sides. Tip the rice onto a serving plate pour the onion sauce over the top and add the fried bananas on top. This can be served by itself, accompanied by an African hot sauce or it can be used as an accompaniment to a meat dish. |
