Aromatic Lamb Recipe

Origin: Mediterranean      Period: Traditional

Ingredients

1 leg of lamb (about 1.6 to 1.8kg)
900g baby red-skinned potatoes, scrubbed
juice of 1 orange
2 tbsp honey
1 tbsp garlic, minced
1 tbsp olive oil
1 tbsp butter
2 sprigs rosemary, chopped
1 tsp thyme, chopped
1 tsp oregano, chopped
salt and black pepper, to taste

Aromatic Lamb Preparation:


Method:

Combine the orange juice, honey, olive oil, chopped fresh herbs, garlic, salt and black pepper in a bowl to form a marinade. Rub or brush this all over the lamb then set the meat in a shallow dish and place in the refrigerator to marinate for at least 6 hours.

Transfer the meat to a roasting pan, surround with the potatoes then season with salt and black pepper and dot with the butter. Cover with foil and place in an oven pre-heated to 190°C. Roast for between 70 and 100 minutes (depending on your desired level of done-ness) then allow to rest for 10 minutes (covered with the foil) before carving and serving.
