The spice blanket is a critical part of this recipe as it flavours the ham and keeps it moist. Ingredients:
1 boneless ham (about 2.5kg)
Aromatic Baked Ham in a Blanket Preparation:Method:Begin by forming a basic dough crust by sifting together the flour and spices into a bowl. Stir-in the sugar then add eough cider (or water) to form a stiff dough. Turn this onto a lightly-floured work surface and roll into a rectangle about 30 x 25cm in size. Place the ham, fat side uppermost, in the base of a foil-lined roasting pan. Lift up the dough you've made and use to cover the top and sides of the ham. Transfer to an oven pre-heated to 175°C and bake for about 3 hours. After about 3 hours, or if the pastry begins to colour too quickly cover with a layer of aluminium foil. When done, remove the ham to a serving plate and allow to rest (covered) for 10 minutes before slicing. It is up to you whether you keep the pastry crust on the ham or remove it. |
