Armenian Bamiya
(Okra Stew) Recipe

Origin: Armenia      Period: Traditional

Ingredients:

500g baby okra, tops trimmed
2 onions, sliced
360ml meat stock
60ml tomato purée
12 dried apricots
juice of 1/2 lemon
salt, to taste

Armenian Bamiya
(Okra Stew) Preparation:


Method:

Add a little lard or butter to a pan and use to fry the onions until soft (about 6 minutes). Whisk together the stock and tomato purée in a bowl then add to the pan. Bring the mixture to a boil then stir-in the lemon juice and okra. Reduce to a simmer then arrange the apricots on top and cook for about 60 minutes, until the apricots are tender and the stew has thickened.

Serve on a bed of rice.
