Ardei a la Moldova
(Moldovan Baked Bell Pepper Salad) Recipe

Origin: Moldova      Period: Traditional

Ingredients

6 bell peppers, tops sliced off and with seeds removed
3 red onions, sliced
pinch of sugar
3 garlic cloves, thinly sliced
salt and freshly-ground black pepper, to taste
50ml olive oil
90ml red wine vinegar


Ardei a la Moldova
(Moldovan Baked Bell Pepper Salad) Preparation:


Method:

Place the bell peppers on a lightly-oiled baking tray. Transfer to an oven pre-heated to 200°C and roast for about 35 minutes, or until soft. Remove from the oven and cover with a clean tea towel (this traps the steam and makes them easier to peel). Once the peppers are cool remove the skin then slice and combine with the onions in a serving dish.

Whisk together the olive oil and red wine vinegar in a bowl and season with the sugar. Whisk again then add the garlic and pour over the bell pepper and onion mix. Toss to combine then season with salt and black pepper to taste. Refrigerate over night before serving.
