Ingredients:
280g whole-meal (brown) flour
Arabic Aseeda Preparation:Method:Place the flour in the base of a large non-stick frying pan and toast gently until lightly browned in colour. Sift into a bowl and set aside. Chop the dates then place in a pan along with the 1.2l water. Bring to a simmer then cook gently until the dates dissolve. Strain through a sieve into bowl. In a separate pan combine the sugar and ghee. Cook gently, stirring all the while, until the sugar has dissolved and the mixture is golden. Gently stir-in the date liquid and cook, stirring constantly, until the mixture comes to a boil. Take off the heat and set aside to cool. Once the date syrup is cold add half the mixture to the flour and stir until smooth. Transfer the mixture to a pan and heat gently over low heat then gradually stir-in the remaining date syrup, stirring constantly. Cover the pan and allow to simmer gently for 45 minutes. Turn into a bowl, spread some of the melted butter on top and serve. |
