Apricot Stuffing Recipe

Origin: Britain      Period: Traditional

This is a classic chicken and turkey stuffing that also works for stuffing pork. The quantities given are enough for a chicken. You will need twice the quantity to stuff the neck end of a turkey.

Ingredients:

90g dried apricots
90g fresh white breadcrumbs
1/4 tsp mixed spice
1/4 tsp sea salt
1/4 tsp black pepper
1 tbsp lemon juice
30g butter, melted and cooled
1 egg, beaten

Apricot Stuffing Preparation:


Method:

Soak the apricots over night in a bowl of cold water to soften. The following day, drain off the liquid then chop the fruit finely before combining in a bowl with all the other ingredients. Add the egg to bind and use as a stuffing.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
