The spice blanket is a critical part of this recipe as it flavours the ham and keeps it moist. Ingredients:
1 half or whole cured ham (about 1.5kg)
Apricot-mustard Glazed Ham Preparation:Method:Place the ham in a shallow roasting pan before transferring to an oven pre-heated to 160°C and baking for 60 minutes, or until heated through. When the ham is ready, melt the butter in a small saucepan. Stir-in the apricot preserve along with the mustard, brown sugar and cardamom. Heat until the butter has melted and all the ingredients have combined then use to brush generously over the top of the ham. Return the meat to the oven and bake for a further 30 minutes, brushing occasionally with any remaining glaze. Allow the ham to rest for 10 minutes before slicing and serving. |
