Apricot Glazed Ham with Pineapple and Cherries
(Apricot Glazed Hamwith Pineapple and Cherries) Recipe

Origin: America      Period: Traditional

Ingredients:

1 fully-cooked ham
100g brown sugar
150g (about) apricot preserves
bay leaves (for decoration)
3 tsp Liquid Smoke
1 tin pineapple rings
Maraschino cherries (for the centre of each pineapple ring)
reserved juice from the pineapple and cherries
360ml fresh orange juice

Apricot Glazed Ham with Pineapple and Cherries
(Apricot Glazed Hamwith Pineapple and Cherries) Preparation:


Method:

Trim the fat from the ham then score the top and sides with a diamond pattern. Place in a deep pan and cover with the fruit juices and liquid smoke. Set aside to marinate in the refrigerator over night, turning the meat three times to ensure even coating.

The following day, place the ham in a roasting tin and spread the apricot preserves all over its top and sides. Space the pineapple rings over the preserves then set a Maraschino cherry in the centre of each pineapple ring, fixing them with wooden picks. Decorate between with bay leaves then transfer to an oven pre-heated to 160°C and roast for 1 hour, or until heated through. Allow to rest for 10 minutes, covered, before serving.
