Apples with Chocolate Recipe

Origin: Britain      Period: Traditional

Ingredients:

4 dessert apples, peeled and cored
100g sugar
2 egg whites
500g chocolate
60g dark chocolate, finely grated
60g caster sugar
1/4 tsp ground cinnamon

Apples with Chocolate Preparation:


Method:

Heat the sugar with 400ml water to make a syrup then add the apples, bring to a simmer, cover the pan and cook for about 20 minutes, or until tender.

In the meantime, combine the chocolate in a pan with 200ml water. Heat until melted then stir in the ground cinnamon and add 200ml more water. Bring to a brisk boil and reduce until the chocolate mixture is just thicker than double cream. Place the apples on a baking tray and fill the centres with the chocolate mixture.

Add the egg whites to a bowl and beat until stiff then beat in the caster sugar and grated chocolate. Beat again until stiff then use this chocolate meringue to cover the outside of the apples. Transfer to an oven pre-heated to 180°C and bake for about 20 minutes, or until the meringue is well browned. Serve hot.
