Apple and Tamarillo Brownies Recipe

Origin: America      Period: Modern

The tamarillo is the wonder food of the moment. This is the fruit of Solanum betaceum a small shrub in the solonacacea (deadly nightshade) family (related to capsicums, potatoes, tomatoes and aubergines). The shrubs are very fruitful and bear fruit in clusters. A single tree in a pot can, over the three month fruiting period, produce more fruit than a single family can consume, so making preserves from the excess fruit is essential. They originate in South America, but with care and if brought indoors in the winter they will survive and bear fruit even in Northern climes. They are grown commercially in New Zealand and Portugal.

Ingredients:

115g butter
190g flour
180g sugar
1 egg
1/2 tsp baking soda
100g chopped and peeled apples
100g tamarillos, blanched, peeled, de-seeded and chopped
180g chopped walnuts
1 tsp ground cinnamon

Apple and Tamarillo Brownies Preparation:


Method:

Melt the butter in a microwave or a pan. Combine all the other ingredients together then mix with the butter. Pour into a greased 20 x 20cm baking pan. Place in an oven pre-heated to 180°C and bake for approximately 40 minutes. The mixture is done when golden brown on top and when a skewer inserted into the centre emerges clean.

Allow to cool, then tip onto a wire rack and allow to cool completely. Cut into squares and store in an air-tight tin.
