One excellent trick when barbecuing is to add a cup (about 140g) of wood chips to the coals. When they begin to smoke they will flavour the fish, meat or vegetables your are barbecuing. Apple wood chips work for just about everything, as does hickory and mesquite. Oak is also excellent for fish dishes. Ingredients:
2 racks of baby back ribs (or spareribs)
Apple-smoked Barbecue Ribs Preparation:Method:Combine the cinnamon, cloves and black pepper and rub into both sides of the ribs. Set these on a rack in a baking dish and place in an oven pre-heated to 190°C. Bake for about 3 hours, or until tender. In the meantime, light your barbecue and when the meat is baked and the charcoal is turning white drain the wood chips and add to the barbecue. When the wood chips begin to smoke base the ribs with the barbecue sauce then place on top of the barbecue. Cook for 10 minutes then baste the ribs and turn. Allow them to cook for a further 10 minutes then serve. |
