This is a rather unusual cold sauce that is particularly good with strongly-flavoured fish such as tuna and also goes well with salmon, sturgeon and zander. Ingredients:
115g tart apples (weighed after peeling and coring)
Apple and Mayonnaise Sauce Preparation:Method:Slice the apples then combine in a pan with the white wine and mint. Bring to a simmer and continue cooking until all the wine has evaporated and the apples are soft. Remove the mint sprig at this point. Mash the apples to a purée then combine with the horseradish. Set aside until cold then beat in the mayonnaise and Dijon mustard. Add the sugar and seasonings, to taste, and serve. |
