Apple and Mayonnaise Sauce Recipe

Origin: Britain      Period: Traditional

This is a rather unusual cold sauce that is particularly good with strongly-flavoured fish such as tuna and also goes well with salmon, sturgeon and zander.

Ingredients:

115g tart apples (weighed after peeling and coring)
1 sprig of mint
120m white wine (or cider)
1 tbsp freshly-grated horseradish
140ml mayonnaise sauce (or thick cream dressing)
1 tsp Dijon mustard
generous pinch of sugar
salt and freshly-ground pepper, to taste

Apple and Mayonnaise Sauce Preparation:


Method:

Slice the apples then combine in a pan with the white wine and mint. Bring to a simmer and continue cooking until all the wine has evaporated and the apples are soft. Remove the mint sprig at this point.

Mash the apples to a purée then combine with the horseradish. Set aside until cold then beat in the mayonnaise and Dijon mustard. Add the sugar and seasonings, to taste, and serve.
