Ingredients:
250g Chocolate Wafer crumbs; (Oreos work well, filling and all)
Another Chocolate Cheesecake Preparation:Method:Combine the chocolate wafer crumbs and melted butter in a bowl, mixing thoroughly. Reserve 1 tbsp of the mixture then press the remainder into the base (and 5cm up the sides) of an ungresed 25cm diameter springfrom cake tin. Transfer to a refrigerator and chill as you prepare the filling. Add the cream cheese to a large bowl and beat until soft before adding he sugar and beating thoroughly to mix. Continue beating until smooth then add the eggs, one at a time, beating thoroughly to combine after each addition. Now add the melted chocolate and beat thorouhgly then add in all the remaining ingredients, beating well. Remove the crust from the refrigerator then pour in the filing mixture. Add a shallow pan with a 2cm depth of water in it in the base of the oven. Now transfer your cheesecake to an oven pre-heated to 160°C and bake for betwen 55 and 65 minutes, or until the edges of the filling are set (the centre of the cheesecake will still be soft). Remove the cheesecake from the oven and set on a wire rack to cool in the pan for 5 minutes. Loosen the sides of the pan after this time and carefully reove. Now allow the cheesecake to cool completely on the wire rack. Garnish the top with the reserved crumbs then refrigerate for at least 3 hours to chill thoroughly before serving (this cheesecake will keep in the refrigerator for at least 3 days). |
