Angelica Sorbet Recipe

Origin: France      Period: Traditional

Ingredients:

250ml water
70g sugar
30g fresh angelica leaves, lightly crushed
4 x 4cm lengths of angelica leaves stems

Angelica Sorbet Preparation:


Method:

Add the sugar and water to a small pan and heat gently until the sugar dissolves then increase the heat and bring the syrup to a boil. Remove from the heat then add the angelica leaves and stems, cover and set aside to infuse for at least half an hour.

Strain the mixture then pour the resultant liquid into the bowl of an ice cream machine and churn according to the manufacturer's instructions.
