Ingredients:
180g butter
Amish Puff Cookies Preparation:Method:Soften the butter then cream together with the sugar and eggs until light and fluffy. Mix together the dry ingredients before slowly adding to the egg mixture. Cover in clingfilm and chill in the fridge for 20 minutes. Mix together the sugar and cinnamon on a plate. Tear off walnut shaped balls of the dough, form into balls and roll in the sugar and cinnamon mix until evenly coated. Place on an ungreased baking tray (about 5 cm apart) and put in an oven pre-heated to 180°C, baking for about 8 minutes, or until flattened and golden brown in colour. If all is well the cookies will puff up then settle down and adopt a crinkly appearance. Allow to cool completely before storing in an air-tight jar. |
