Ingredients:
450g sugar
Amish Oatmeal Cookies Preparation:Method:Grind together the raisins and peanuts in a food processor until coarsely ground. Meanwhile sift together the flour, baking powder, nutmeg, cinnamon and salt. Cut-in the lard then add the sugar, oatmeal and the ground raisins and peanuts. Mix well to combine. Dissolve the soda in the buttermilk then add the molasses and beaten eggs. Add this mixture to the flour mix and bring together into a dough. Wrap in clingfilm and chill in the fridge for an hour. When the dough is ready, tear off walnut-sized pieces, roll into balls then flatten slightly with your hands. Place on a baking tray then beat together the eggs and milk and use this to glaze the tops of the cookies. Place in an oven pre-heated to 180°C and bake for about 10 minutes, or until golden brown. Allow to cool completely before storing in an air-tight jar. |
