Amish Muffins Recipe

Origin: Amish      Period: Traditional

Ingredients:

900g flour
5 tsp baking soda
2 tsp salt
2 tsp allspice
450g raisin bran
450g sugar
250ml oil
1l buttermilk
2 tsp vanilla extract

Amish Muffins Preparation:


Method:

Mix all the dry ingredients together in a bowl then add all the liquid ingredients and mix to form a batter. Butter muffin tins then fill each well only 3/4 full of the batter. Place in an oven pre-heated to 170°C and bake for about 20 minutes, or until the muffins have risen and are golden brown on top. Serve warm.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
