Ingredients:
300g light brown sugar
Amish Coffee Cake Preparation:Method:Mix he flour and sugar in the bowl. Cut in the butter until the mixture becomes lumpy (take out about 180g at this point to make the topping). Dissolve the baking soda in the coffee and add to the flour mixture. Lightly whisk together the egg and vanilla and add this to the batter. Mix thoroughly then spread evenly in the base of a well-greased a 22 x 30 x 5 cm baking pan. Sprinkle the reserved dough as a topping then place in an oven pre-heated to 160°C and bake for about 30 minutes. Test for doneness by inserting a skewer into the centre of the cake. When the skewer comes out clean the cake is done. Sprinkle the top with icing sugar and allow to cool before removing from the tin, cooling completely on a wire rack and serving. |
