This is a classic frosting (icing) that can be used as a filling as well as to decorate your cake. If using as a filling then double the quantities in this recipe. Ingredients
180g caster sugar
American Icing Preparation:Method:Combine all the ingredients in the top of a bain-marie (double boiler). Stir until all the sugar has dissolved then whisk with a rotary whisk or electric mixer until stiff, keeping the sides of the pan cleaned down with a rubber spatula. When ready the mixture will stand up in peaks. Add the flavourings and use to fill and/or decorate your cake. This frosting (icing) is also suitable for flavouring with nuts, glacé fruit and other decorations. |
