American Icing Recipe

Origin: America      Period: Traditional

This is a classic frosting (icing) that can be used as a filling as well as to decorate your cake. If using as a filling then double the quantities in this recipe.

Ingredients

180g caster sugar
2 tbsp water
1/4 tsp cream of tartar
1 egg white
small pinch of salt
a few drops of vanilla extract (or your choice of flavouring)


American Icing Preparation:


Method:

Combine all the ingredients in the top of a bain-marie (double boiler). Stir until all the sugar has dissolved then whisk with a rotary whisk or electric mixer until stiff, keeping the sides of the pan cleaned down with a rubber spatula. When ready the mixture will stand up in peaks. Add the flavourings and use to fill and/or decorate your cake.

This frosting (icing) is also suitable for flavouring with nuts, glacé fruit and other decorations.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
