Originally this was an Italian recipe for a basic meringue that's subsequently been adapted (in the USA) as a cake frosting (icing). The ingredients are essentially identical to those of the Seven Minute Frosting, but the preparation method is completely different. Ingredients
225g granulated sugar
American Boiled Frosting Preparation:Method:Dissolve the sugar in the water in a pan over gentle heat. Add the cream of tartar and bring the mixture to a rapid boil until it reaches a temperature of 144.5°C. Remove from the heat and when just off the boil pour slowly and steadily onto the beaten egg white, whisking constantly. Continue whisking rapidly until the mixture is stiff enough to spread. Flavour to taste, as desired and use immediately. This recipe also works as a cake filling. |
