Origin: Greece      Period: Traditional

Ingredients:

1kg string beans
6 tbsp olive oil
1 tbsp vinegar
salt, to taste

Ambelofassoula Salata
(String Bean Salad) Preparation:


Method:

Clean and wash the string beans (remove any strings by slicing the ends and pudding away to extract the strings). Bring a pan of lightly-salted water to a boil, add the beans and cook for 20 minutes, uncovered, or until tender.

Turn into a bowl then mix the oil and vinegar and pour over the beans. Season with salt, toss to combine and serve. As a variant you can also use the garlic sauce, Skordalia to dress the beans.
