Altdeutsche Brotchen
(Quickbread) Recipe

Origin: German      Period: Traditional

150g butter
120ml sugar
2 large eggs
1 tbsp rum
1 tsp vanilla extract
3 tbsp milk
1/2 tsp cinnamon
2 tsp baking powder
300g flour unbleached
50g ground almonds
1 tbsp orange rind, finely grated
50g raisins

(Quickbread) Preparation:


Method:

Cream together the butter and sugar then beat in eggs, rum, vanilla, and milk. Meanwhile mix the cinnamon, baking powder and flour together. Add the flour mixture to the butter mixture. Gently mix in the almonds, orange rind, and raisins then pour the batter into greased muffin tins, filling half full. Bake in an oven pre-heated to 180°C for about 25 to 30 minutes, or until browned.
