Aloko Recipe

Aloko is a classic Ivoarian snack made from deep fried plantains or green bananas that's also classically served as an accompaniment to grilled fish.

Ingredients:

5 large near-ripe plantains
oil for deep frying

Aloko Preparation:


Method:

Prepare the plantains by peeling and cutting lengthways and then slicing across into thin half-moons. Add oil (preferably palm oil, but groundnut oil wull do) to a wok or deep pan so you have a depth of about 10cm. Heat the oil and when quite hot add a third of the plantain slices. Fry until the slices are reddish broen and crisp. Remove with a slotted spoon and set on kitchen paper to drain. Repeat until all the plantains have been fried. Serve immediately as an accompaniment to grilled fish. The other traditional way is to serve as a snack with fried onions and hot chilli sauce.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
