Aloha Wild Rice Recipe

Origin: Hawaiian      Period: Modern

Ingredients:

180g wild rice
700ml water
1 tsp salt
100g cooked chicken, diced
80g celery, diced
80g spring onions, finely diced
1 small can crushed pineapple, drained
100ml mayonnaise
2 kiwi fruit, peeled and sliced
salt to taste

Aloha Wild Rice Preparation:


Method:

Add the wild rice, water and salt to a 2l casserole dish. Bake, uncovered, in an oven pre-heated to 170°C for 45 minutes, or until the rice is fluffy. Allow the rice to cool completely then, in a large bowl, mix with the chicken, celery, spring onions and pineapple. Mix-in the mayonnaise, top with kiwi fruit and serve.
