Aloco Recipe

Origin: Cote dIvoire      Period: Traditional

This is a very popular roadside dish in the Côte d'Ivorie and is made from plantains fried in red palm oil, often with he inclusion of tomatoes and chillies. This is typically served with grilled fish.

Ingredients:

400ml red palm oil
6 ripe plantains, peeled and cut into discs
1 tbsp salt
1 onion, chopped
2 tomatoes, blanched, peeled and chopped
1 hot chilli, chopped

Aloco Preparation:


Method:

Heat the palm oil in a frying pan and sprinkle the plantains with salt. Add the plantains to the oil and fry until golden brown then remove from the oil and set aside. Add the onion, tomato and chilli to the oil then fry for a few minutes, stirring frequently. Add 4 tbsp water then reduce the heat and simmer until the sauce thickens.

To serve, place the plantains on a dish, cover with grilled fish and pour the palm oil, onion and tomato sauce over the top.
