Almond Paste Recipe

Origin: America      Period: Traditional

This is the classic American version of British marzipan, a paste made from ground almonds bound with eggs and flavoured with sugar, lemon juice, almond essence and sherry or rum.

Ingredients

450g ground almonds
225g icing sugar (finely sifted)
225g caster sugar
2 small eggs
juice of 1/2 lemon
1 tbsp sherry or rum
1 tsp orange flower water
a few drops of almond essence


Almond Paste Preparation:


Method:

Combine the caster sugar, icing sugar and almonds in a bowl. Stir to mix thoroughly. Lightly beat the eggs in a bowl then add to the almond mixture. Add all the other liquids and work, first with a fork, then with your hands to a smooth paste. Use to cover cake or shape into decorations.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
